Spiced Pork and Apple skewers with ginger, lime and honey sauce

So it’s summer and you want to throw something on the barbecue. You made your ratatouille  and you want the perfect dish to go with it…. Boy! Do I have a treat for ya!

The ingredients… Les ingredients…

For 4 persons;

  • 1 porc loin, no bones of course, of about 1kg (2,2 lbs)
  • 2 tablespoons of Olive oil
  • 1 teaspoon of red pepper powder
  • 1 teaspoon of rock salt
  • 1/2 a teaspoon of cumin
  • 1/2 a teaspoon of powdered garlic
  • 1/2 a teaspoon of dried oregano
  • Freshly ground black pepper
  • 4 cooking apples
  • Metal or Wooden skewers

For the sauce;

  • 25 cl (1/2 pt) of apple juice
  • 2 tablespoons of honey (Make sure it is pure honey, favour local producers)
  • The zest of one lime
  • 2 tablespoons of lime juice
  • 1 teaspoon of freshly grated ginger
  • Freshly chopped basil (optional)
  • 1 pinch of rock salt
  • Pepper from the mill

Finding all the ingredients in your kitchen drawers: 15 min      

Preparation: 30 min            

Cooking time for the sauce : 20 to 30 min      

Cooking time on the bbq: 6 to 8 minutes

The sauce:

Here’s a tip: If you plan to use wooden or bamboo skewers, soak them in water for about 30 min, this will avoid them catching fire on the bbq!

Make the sauce first as it will take longer to cook. DSC00274

Mix the apple juice, the honey, the lime zests, the lime juice, the ginger and the salt in a saucepan and let it simmer for about 20 to 30 minutes. Stop cooking when it becomes treacly and has reduced by half. let it cool down.

 At this point you can add the freshly chopped basil.

There you go…. your sauce is done!

The skewers:

Cut the meat in 1,5 inch cubes. Put them in a large salad bowl, add the olive oil and mix.  Add the cumin, the garlic, the oregano and black pepper and mix very well to cover all the meat cubes.

Peal the apples, remove de pips  and cut them in cubes about the same size as the meat cubes.

Then, slide the porc and the apple cubes on the skewers, alternating meat and fruit… Leave the skewers to rest for about 20 to 30 minutes and voila!

Prepare your barbecue, you need a strong fire with no flames and cook for about 6 to 8 minutes.

Serve hot, pour 1 tablespoon of sauce on each skewer and serve with, for exemple, your now favorite ratatouille… Bon appetit!
